Menu engineering sprint

Your menu is a machine.
Ours is the operator's manual.

Flat $1,500. Includes the A2 costing underneath — no double-buying.
One build. Everything below is included.

Exhibit A — the deliverable

A case file,
not a report.

This is a real sprint matrix (anonymized). Every menu item placed by contribution margin and popularity — and every quadrant gets its move, named and priced.

1.Stars fund the room; puzzles starve it — repositioning a puzzle usually outearns adding a new dish.
2.Plow-horses (popular, thin) carry price room — a $0.50 move on a high-volume item outruns a supplier switch.
3.Dogs are not always deleted — some exist to make anchors look cheap. The matrix shows which kind you have.

Every packet contains:

  • The full matrix — every item, both axes
  • Re-costed recipe cards, kitchen-ready
  • Price architecture with anchor logic marked
  • A walkthrough for the line and the floor
Human-verified before it reaches you. Machine math, human judgment.

How it works

Three steps. One sprint. Two weeks.

STEP 1

Cost pass first (A2)

The $495–$895 costing audit runs first — the sprint builds on its numbers.

STEP 2

Matrix + architecture

Every item placed and moved: placement, price, spec, cut — human judgment on every quadrant.

STEP 3

Walkthrough, then handoff

45-minute recorded walkthrough; your team applies the moves that week.

$1,500 flat — matrix, cards, architecture, walkthrough. Runs after any A2 costing, no double-buy.

Three questions

What's the difference from A2?
A2 tells you what everything costs and which prices to move. A5 rebuilds the menu as a system: placement, anchors, spec, cuts — with a walkthrough for the team.
Can you run it without A2?
The sprint needs current costs to be honest, so A2 always runs first — its fee comes off the sprint price.
Will we need new printing?
Usually yes — one reprint. The matrix marks which items changed, so most menus are a patch, not a rebuild.
